Africa sub sahariana. Benn's Honey Chicken, pollo al miele e cardamomo, da Zanzibar.

Siamo in una raccolta: Monografie. Un'Africa approssimativamente sub sahariana, cucina inclusa. Per 6 persone morigerate. Valutate quanta buccia di lime: la mia era molto amara; ne ho messa appena un po' meno di quella prevista. Mirabile equlibrio di imprevisti sapori, osate pure. Servito con riso al cocco nel menu di Gennaio 2015. Cena coloniale, ovvero pollo al miele di Zanzibar e altre cosucce esotiche.

Pelare e affettare 500g di patate dolci; condirle con il succo di un lime, sale, pepe nero appena macinato, 6 spicchi d'aglio ridotti in crema e un po' d'olio d'oliva.

Massaggiare con olio d'oliva, sale e pepe nero appena macinato 1,500 kg di cosce di pollo. Metterle in una teglia e cuocerle in forno già caldo a 200°; farle dorare, aggiungere la patate, portare l'insieme quasi a cottura.

Mescolare a 300g di yogurt mezzo cucchiaio di semi di cardamomo triturati, sale e pepe nero appena macinato. Versare sul pollo, far cuocere ancora 10'.

Pelare tre lime con un pelapatate, ridurre le bucce e julienne, sbollentarle; spremerli, mescolare succo e 7 cucchiai di miele in un tegamino, aggiungere le bucce.

Scaldare, versare sul pollo oramai fuori dal forno, portare in tavola.

La ricetta, quasi tal quale, su zanzinet e afrochef, identiche, ma con qualche piccolo particolare procedurale in più in afrochef. Riporto la seconda.
Ingredients: 500g sweet potatoes, 2 tbsp. olive oil, Lime juice of 3 limes, 6 garlic cloves, sliced, Salt, Sugar, 1 chicken (about 2 kg), Black pepper, 300ml natural yogurt, 1 tsp. ground cardamom seeds, Zest of 3 limes, 7 tbsp. honey
1. Prepare the sweet potatoes by peeling and cutting in half length-ways.
2. Prepare a marinade of the olive oil, salt, sugar, garlic and lime juice and toss the sweet potatoes in this. Arrange in an oven-proof roasting dish.
3. Meanwhile clean and wash the chicken. Season liberally with salt and black pepper both inside and out.
4. Fry in a little olive oil to give it a good color. Then transfer to the roasting tin along with the sweet potatoes.
5. Roast the chicken at 190°C for about 100 minutes (for a 2kg bird) or until the bird's juices run clear when pricked with a skewer and the sweet potatoes are soft and nicely colored.
 6. Take the chicken out of the oven and allow resting for 10 minutes. Mix the yogurt with the cardamom and black pepper.
7. Pour this mixture over the chicken and cook in the oven for a further 10 minutes.
8. Meanwhile blanch the lime zest in boiling water. Transfer to a fresh pan, add the lime juice and bring to a boil.
9. Add the honey and when the honey has melted transfer the chicken and sweet potatoes to a serving dish and pour the honey and lime sauce over the bird. Serve immediately
